Honey Cakes

This recipe comes to us from Lindsey, who says, "Faeries just love these! They're even mentioned in J. R. R. Tolkien's The Hobbit as Bilbo Baggins' favorite food, and I must admit, they are addictive. If you use the right kind of bread crumbs, they can also be very healthy. I use my mother's homemade whole grain bread. Take some along with you on a hike and you may attract some of the Wee Folk. Enjoy to the fullest!"

Ingredients

1 tablespoon melted butter
2 cups fine dry bread crumbs
1 cup honey, plus more, for garnish
1/4 cup brown sugar
4 eggs, separated
1 cup toasted chopped hazelnuts or walnuts
Whipped cream, for garnish

Directions
  1. Brush some large muffin tins with melted butter, and sprinkle with 1/4 cup of the bread crumbs. Set aside.
  2. Preheat oven to 375 degrees F.
  3. Place honey in a mixing bowl and set over a pot of steaming water; warm until it gets loose.
  4. Add the sugar and egg yolks to the honey, and whisk until frothy.
  5. Remove the bowl from the heat and whisk in remaining bread crumbs and hazelnuts.
  6. In a separate bowl, whisk the egg whites until stiff and fold into the batter.
  7. Place mixture into the muffin tins and bake for 30 minutes.
  8. When cool remove from pan and garnish with whipped cream and a drizzle of honey.
