4 each chicken pieces, skinless
3/4 teaspoon salt
3/4 teaspoon pepper
1 tablespoon vegetable oil
4 cloves garlic -- crushed
2 each medium onions -- chopped
1/2 teaspoon cinnamon -- ground
1/4 teaspoon red pepper -- crushed
1 cup chicken broth
1/3 can fresh orange juice
3 tablespoons raisins
2 each orange -- sectioned
Season chicken with 1/4 tsp each salt and pepper. Heat oil in
a large nonstick skillet over medium heat. Add chicken, cover and
cook, turning occasionally with tongs. 10 minutes or until browned.
Transfer to a plate, pour off all but 2 Tbsp fat.
- Add garlic, onions, cinnamon and crushed pepper to skillet. Cook,
stirring occasionally, 5 minutes or until onions are golden brown.
Stir in broth, orange juice, raisins and remaining 1/2 tsp each salt
and pepper. Return chicken to pan, cover, reduce heat and simmer 20
to 25 minutes until chicken is cooked through.
